I am back with another Gluten-Free recipe, this time I am sharing gluten-free ice cream sandwiches! Do coconut and chocolate ice cream sandwiches sound yummy? When your down to the last few scoops of ice cream what is left to do other than mixing it with another container of ice cream. Ice cream, in general, is delicious but having two kinds of a mixed plus in a cookie ice cream sandwich is mouth-watering delicious!
Here is how I made the gluten-free ice cream sandwiches:
Where Did I Buy The Cookies?
My mom bought these PC Coconut Cookies from Superstore.
Here is What I Did to Make the Gluten-free Ice Cream Sandwiches
Take the cookies and place them upside down.
Ice Cream Time
Last time we use the Naked Coconut Ice Cream from Coconut Bliss, now we will also be using their Chocolate Hazelnut Fudge Ice Cream.
Take a scoop of the Chocolate Hazelnut Fudge and put it on one side cookie.
Next, take the Naked Coconut Ice Cream and place it on the other side of the cookie.
Time to Wrap Up
Now, place the other cookie on top of the ice cream scoops.
Wrap it in plastic wrap.
And place it into the freezer.
Final Thoughts
This is such a brilliant way to make yourself some gluten-free ice cream sandwiches. I love how simple it is is to make and it doesn’t take too much of your time. Plus it tastes delicious! Now whenever you are ready for a treat, all you have to do is take out the individually wrapped gluten-free ice cream sandwiches and enjoy!

So glad I found your link over at Bewitchin' Projects Block Party! I love this idea, I don't think that we have that exact brand of ice cream here in Australia but I'm sure that any good quality ice cream would do! I am definitely going to be making some of these for my freezer!
