Very Cherry & Coconut Cupcakes

I baked! Yes, I baked a set of very cherry and coconut cupcakes! I love baking and making cupcakes my own. Probably since cupcakes and cakes are pretty much the only things I haven’t burnt to a crisp. It has been cold the past few days, the kids have a cold which is keeping them home from school and I am wearing fall season clothes.

My mom has been wanting me to bake for a while now but been busy with re-editing my novel and doing blog posts so I figured the kids are home and I am home plus it is cold so this was the right time to fill my apartment with the sweet smell of cupcakes. I make two batches of cupcakes, one mine and one the kids for the reason being that the kids would eat it all and I would be left with none. It has happened before so now, we have separate batches. One for me, one for them and also one for my mom because she is gluten-free so hers is naturally meant for her. (Won’t be sharing the gluten-free recipe since my mom did hers this time… sorry but you can look forward to the kids one.)

Things you will need:

Betty Crocker Super Moist Cherry Chip Cake Mix, 1 Cup of Water or Milk (I used Water)
1/2 Vegetable Oil, 3 eggs, Coconut Shredding

Preparations

 Pour the cake mix into a bowl.

Place the items into the bowl.

And mix them together.

I pour the coconut last and mix then mix it in.

I bought these new cupcake tins from Dollarama, you should have seen the craziness I was using before.

Place your cupcake holders into your tin.

Pour the mix into the cupcake holders.

Oven Time!

In the oven for 350’C

Keep in oven for 20 minutes or until the cupcake passes the ‘no stick to toothpick’ test

Final Thoughts

Yummy! Very Cherry cupcakes have been my favourite from since I was small and my grandma would make them for me. Now with the added coconut it just makes it even more amazing!
